The Apple Festival

This weekend was the annual University of British Columbia (my ole alma mater) Apple Festival. Daryan and I went on Sunday after our pottery class; we rode on the old-fashioned trolley, walked through the vegetable gardens and the asian gardens sipping fresh squeezed hot apple juice, and nibbled on apple chips. Although it was rainy and cold (as it was last year, too, come to think of it) we had a fun time learning about hundreds of apple varieties. We bought some organic fameuse apples on our way out. Thought I'd post one of my favourite apple recipes here, too - 'cause I'm going to make these muffins with all my apples in a few moments! And by the way, they're high in taste and low(ish) in sugar and fat! Enjoy!

CHEDDAR APPLE MUFFINS

ingredients...
3 cups whole-wheat flour
2/3 cups sugar
2 tsp. baking powder
1 tsp. cinnamon
1 1/2 cup shredded sharp cheddar
2 eggs
1 cup apple juice
1/2 cup butter, melted
2 cups finely chopped apple (I keep the skin on - healthier that way!)

directions...
- Combine flour, sugar, powder, salt, and cinnamon
- Add cheese and mix together
- Beat eggs with apple juice and stir in butter and apple pieces
- Add this liquid to the flour mix all at once
- Stir everything together until moistened

Pour batter evenly into muffin tin - i usually grease the pan and place muffin papers inside each mold.
Bake 25-30 minutes @ 375 degrees. Makes 12 muffins.

thanks mandy! yes, the muffins are yummy (but this time i made them and the teflon of the pan came off onto the muffins - yuck)... had to throw them all out :(
